what do I do or look at differently if I use an 8ohm woofer and a 16ohm tweeter

Differently? Nothing. You have to import an impedance file for each driver, it's unique to each driver, then you pay attention to the system impedance while designing the crossover. I can't say that I've ever seen a tweeter with a nominal 16 ohm rating, however. It's common to have drivers with different nominal impedances.

I would like to see more videos on subjects. I am having trouble knowing what the end result on the impedence graph should look like

There is no particular end result for impedance. Every change in the crossover will change the impedance. The primary concern is that the impedance does not drop much below some level that is based on your concerns, such as whether or not your amplifier can handle the impedance.
