how to pick

I'm a bit overwhelmed by the choices for kits. In the past I've built the Overnight Sensations and the Zaph ZA5.2 speakers.
I've had the itch to build more and with the coming likely hood of being stuck at home I figure now is a good time for a project. But I don't know what to look for when I'm looking at the choices.
If I could find something fun to build for around $250-300 in parts it would be great. $500-$800 wouldn't be out of the question if they would be that much better.
Part of the problem is I don't really need the speakers so I don't have a designated amp for them. My one amp is a low power SE tube amp (8 ohm). My other is a PP tube amp and my other is a SS 80 watt amp. I mostly listen to pop, jazz (mostly smooth) and light classical.
What should I look for in a kit?
